Recipe: Pad Thai Zoodles

I love pad thai so much. Like favorite Asian dish to Seamless. So when I found this recipe to make pad thai using my spiralizer I had to try it. It's also super easy with minimal ingredients. No time for difficult recipe steps in this kitchen. I made 2 servings because hello I love leftovers and I have to admit that I enjoyed it even more leftover! But I also love cold pizza from the night before, so go figure.

Spiralized Zucchini Pad Thai (recipe adapted from The Iron You)
Serves: 2

Ingredients
2 large zucchinis
1 tablespoon olive oil
1 garlic clove, minced
2 eggs
1.5 tablespoons soy sauce
1 tablespoon lime juice
3 scallions
2 tablespoons roasted cashews
1/8 tablespoon red pepper flakes

1. Stir together soy sauce, lime juice, red pepper flakes. Set aside.
2. Spiralize zucchini.
3. Heat pan and sauté zucchini noodles for 2-3 minutes.
4. Transfer noodles to a bowl & drain excess water from the pan.
5. Heat remaining olive oil and add garlic. Saute for 1-2 minutes.
6. Add scallions and sauté for 1-2 minutes.
7. Beat eggs in a small bowl and pour into the pan. Stir around and scramble them up.
8. Add soy/lime sauce and zucchini noodles to the pan. Let everything cook for 1 minute.
9. Sprinkle with roasted cashews and serve!
