Recipe: Roasted Veggie Power Bowl

True or false I ate this bowl 4 different times this week? 

True! I bought all the ingredients at Trader Joe's (of course) on Sunday and they lasted me all week. I felt like I was on a [holiday] bender last week between our office holiday party, the morning after, an indulgent night of Secret Santa, and the Sunday that followed those escapades (because the way to cure a hangover is to eat spaghetti and a quesadilla....yeah). Anyways I went into this week with a different mindset and if I am going to indulge in the holidays then I better be eating as healthy as I can in between. Insert Roasted Veggie Power Bowl. It's super filling, less than 300 calories, and has virtually zero sugar in it. Save that sugar for the cookies.

Roasted Veggie Power Bowl
1-2 cups of kale
1/2 cup of butternut squash, cubed
1/2 cup of brown rice
1/2 avocado, sliced
1/2 lemon

1. Heat oven to 400 degrees, drizzle butternut squash with olive oil, and roast for 15-20 minutes
2. Massage kale with olive oil (someone just order me that sweatshirt that says KALE plz)
3. Cook brown rice
4. Place kale in a bowl, followed by brown rice, roasted butternut squash, and avocado
5. Squeeze lemon juice over the bowl and toss together

Oh! And if you want to be super annoyingly healthy -- try this banana ice-cream recipe. Blend 2 frozen bananas with 1 tablespoon of peanut butter and bam! You have "soft-serve" banana ice-cream. You can eat this guilt free treat as you cry over the fact that you didn't score Adele tickets.
