A Saturday Well Spent

Maybe I am just getting old but my favorite type of Saturday night is one spent cooking dinner and drinking wine with my bests. Zach is back in New York after traveling throughout South Africa and we spent the whole night listening to music, catching up, and drinking all the wine. ALL of the bottles. 

I also made us healthy homemade tortilla pizzas for dinner. They are so easy to make, and so filling! My recipe below (adapted from this recipe):

Tortilla Pizza
- 1/2 tablespoon of olive oil
- 1 whole wheat tortilla
- 1/3 cup of tomato sauce (love Rao's)
- 1/4 cup of shredded mozzarella cheese
- handful of arugula (mixed with a little lemon juice)
- prosciutto

1. Preheat oven to 425 degrees and brush olive on both sides of tortilla
2. Spread marinara sauce on tortilla and top with mozzarella cheese
3. Bake 5 - 10 minutes... your judgment
4. Top with arugula and prosciutto slices. Eat up!
